Well, maybe not a million…
For Cinco de Mayo, I made these absolutely delicious margarita cupcakes with Silver Patrón tequila.
These cupcakes required buttermilk. But buttermilk doesn’t come in small containers (at least at the grocery store I go to), so we had to get a large container. We couldn’t let the rest of it go to waste, so we spent a whole day making things with the leftover buttermilk; pancakes, donuts and biscuits. Starting with breakfast we made delicious buttermilk pancakes from scratch. For an afternoon snack, we repurposed our cake donut recipe and took advantage of this moment to take new photos! To top off the day, we made soft and fluffy buttermilk biscuits and used them as buns for Fatima’s fried chicken.
The pancakes were great and I’ll always love a good donut, but the soft and fluffy biscuits won the prize. They were just as soft, fluffy, and buttery as they sound. Move over Popeyes, you gotta a new biscuit in town! All of the calories burned during the miles of walking around the city we did on Saturday were canceled out when we made and consumed everything above – that’s a win-win in my book!
