The TLDR on this recipe is these brown sugar cookies are just chocolate chip cookies without chocolate chips. My wife loves my chocolate chip cookies, but she doesn’t love a lot of chocolate chips. She really loves the cookie piece. For Mother’s Day weekend, I made these chocolate chip-less cookies (or what I’m calling brown sugar cookies because that sounds better).

One time, she asked for a cookie without chocolate chips. To that, I said, so you want a sugar cookie? She said, “No, your chocolate chip cookies without chocolate chips.” In my head I said, “What the eff, what?? Who does that?”

And you know what? She was right (that pains me to write that). Sugar cookies, made of only white sugar, are missing that warmth provided by the brown sugar you get from a chocolate chip cookie. I loved eating these cookies.

How to make brown sugar cookies

Like I said, these are chocolate chip cookies without the chocolate chips. I used my absolute favorite chocolate chip cookie recipe to make these cookies. It’s a really good cookie base for when you want to mix in other stuff. Like peanut butter or caramel chips.

I was happy to make Fatima’s dream come true. She was floored that I made her almost a dozen of these. She was only expecting one or two of these. Fun fact, chocolate chips help squeeze out a full dozen on the flagship recipe. You may only get eight to ten of these chocolate chip-less cookies.

Your favorite chocolate chip recipe without the chocolate chips!

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 1/2 cup salted butter, at room temperature
  • 1/2 cup packed light brown sugar
  • 6 tbsp. granulated sugar
  • 1 large egg
  • 1 tsp. vanilla extract

Instructions

Preheat the oven to 350°F.

In a medium-sized bowl, combine flour, baking soda, and salt.

In a large bowl or Kitchen Aid stand, beat butter, brown sugar and granulated sugar until smooth (2 minutes).

Add the egg and vanilla. Continue to stir until blended.

Gradually add the flour mixture and mix just until incorporated.

Using a large ice cream scoop, drop the dough onto the baking sheets. We can fit about 6 large cookies on one sheet.

Bake the cookies for about 10 minutes (+/-). The edges should be slightly browned.

Once you take the cookies out of the oven, let cool on the baking sheet for about 5 minutes and then transfer the cookies to a wire rack to cool completely.

You'll get about 8-12 LARGE cookies.
