I made this for the third time on Monday, with another Cravings recipe, while juggling the attention of our son. All by myself. No–I’m not looking for parenting points. Fat and I tag team when we need to make dinner, but mom wasn’t home yet. Stranger anxiety and teething has made him very clingy lately, so being able to juggle his needs and make these two dishes goes to show how easy this recipe is. Or I’m super dad. I’ll let you decide.

Lately, our son has been my little helper in the kitchen. He hears about my day, I listen to his. However, I’m still not fluent in babble. But, I make sure to actively listen when he’s talking. I set him up in the kitchen, at a safe distance away from the oven, and he helps me navigate the recipe. Once we get a few more spices integrated into his food, he’ll be able to start taste testing for me.

I took advantage of a long, late-in-the-day nap to prep everything. You will win at life if you pre-cut/chop/slice/and measure your seasonings before you need to cook. Even opening all the cans ahead of time will help you out. And it makes you feel like you’re on a Food Network show once you start cooking.

Fat had an idea she was going to be a little later this week, but suggested making Chicken Tikka Masala, another favorite of ours. It sounded like a good idea until I got to the store. I walked by a pile of jalapeños and thought about this Red Chicken Curry. So I changed course. Someone mentioned coconut rice at work last week, and it sounded so good. I’ve never had coconut rice before, but I had a bag of coconut from making energy bites. So I thought I’d try it. The coconut rice is a Cravings book 1 recipe. The two were a perfect match! I can’t wait to eat the leftovers tonight!
