Garden Thyme: Sweet Potatoes

Sweet potatoes are a great vegetable to enjoy all year long. Unfortunately, in Connecticut, the harvest time is September-October so enjoy these vegetables for your fall favorite recipes like Fatima’s Sweet Potato Pie!

Sweet Potatoes

Sweet potatoes are great for any gardener because they are easy to setup and do not need much care. Make sure you plant them in an area with full sun exposure and lots of room. They are heat tolerant, but always water and keep the soil moist because the potatoes are underground. I don’t like to prune the vines because the plants grow and spread and that will increase a good harvest. When the leaves start to turn yellow in mid fall you can carefully (so the vegetables don’t bruise) take the plants out of the ground. Create your fall meals with these low calorie and nutritious vegetables.
