Breakfast in bed. Airports. Extended vacations at the lake house. Snow days. Christmas morning. These are some of the things that come to mind when I think about cinnamon rolls. They are the comfort food of all comfort food.

A Cinnabon cinnamon roll is the greatest indulgence when you’re waiting at the airport. You can’t just walk by the store, smell the warm cinnamon and sweet icing, and not buy one. So when thinking about a Father’s Day breakfast, cinnamon rolls were at the top of my list.

Why else would Pillsbury want to add Cinnabon icing to their Grands Cinnamon Rolls?

On my first Father’s Day a few weeks ago, I made these homemade cinnamon rolls. I prepped the dough the day before, rolled the log, cut them up, and stored them in the fridge overnight. On Sunday morning, while the oven was heating up and the rolls were warming to room temperature, I made the icing. This is Cinnabon’s secret weapon. Why else would Pillsbury want to add Cinnabon icing to their Grands?

Icing can make or break what you’re baking. It can be too sweet, too grainy, and sometimes too watery. This icing works perfectly with the cinnamon rolls. Just the right amount of cream cheese balances nicely with the sugar and vanilla. I’m not really a fan of cream cheese icing, but this turned me. So delicious!

A Few Takeaways:

  • The next time I make these, I will cut down on the nutmeg used in the cinnamon sugar. A little overpowering for summer. Had I made these in the fall, the nutmeg would be perfect.
  • I only needed half of the icing. The recipe says to slather with half of the icing and then add more if needed. I only needed half but saved the extra to reapply when I reheated leftovers.
  • Leave yourself time to let the dough rise. I recommend making the day before you need them.
  • These were so easy to make.

Chocolate or blueberries!

For blueberry cinnamon rolls, sprinkle wild blueberries over the cinnamon mixture after spreading it on the dough. Carefully roll up the dough.

For chocolate cinnamon rolls, dust a tablespoon of cocoa powder over the cinnamon mixture. Then sprinkle a half cup of chocolate chips and roll up the dough.
