Who doesn’t love banana bread? It’s one of the holiday staples. Growing up, we’d invite my nana over and make a bunch of desserts for Thanksgiving and again closer to Christmas to send out to family. We would dig into my grandmother’s handwritten index cards and get to work. We’d have a service line of apple peelers, choppers, measurers, and mixers. My mom and nana would add the finishing touches and put them in the ovens. Some of my favorites to make were banana bread, peanut butter blossoms, and apple pie. We had so much fun.
For the win
When we were in Hawaii, we learned that banana bread is practically the state food. We tried to get our hands on Julia’s Best Banana Bread. Everything was against us, so we ordered through the mail! It was delicious. The key to any good banana bread is in the ripeness of the bananas. The browner, the better.
We first made this chocolate coconut banana bread at the end of September. The air finally started to cool as fall set in and it just felt like a banana bread kind of day. It was awesome. The coconut was a surprisingly delicious addition. The chocolate? Next time, we’d cut a quarter or half of it out. Don’t get me wrong, adding in chocolate elevated this banana bread to another level. However, it was very sweet. Other than that, this is a solid recipe and one we will be making over and over again this holiday season.
