Chrissy Teigen’s cookbook has done it again. These Margarita Chicken Fajitas with Mushrooms and Spinach were phenomenal. Chicken fajitas are my go-to request for every birthday, night out, or weekly dinner option. I guess it bodes well that I love margaritas. I’m not sure if I loved the idea of a deconstructed meal early in my life, but I love fajitas.
With Cinco de Mayo coming up, we thought this was a perfect time to try out this recipe.

When I was a kid, dinner time was a sacred time for the family. I’m not sure how they did it, but they made us all present for dinner. We’d sit around the table and talk about our days. Then my dad would ask us, “What did you learn today?” After a grueling day of AP classes, this is the last question I wanted to hear. But, we couldn’t move on until we had an answer. If the landline rang, we couldn’t answer it. Once cell phones arrived (very weird to say that), we had to leave them in our rooms. Homework? It had to be done before dinner or almost done. Dinner was a way for us all to spend time together as a family, uninterrupted.
When Fatima and I started living on our own, we adopted this notion of “dinnertime.” For us, this a time when we get to see each other after our long days at work. It seems old school, but this is an important time for us, especially when Fatima is going through busy season. We shared dinnertime with our friend Edwin a few weeks ago when we made these fajitas. I highly recommend pairing these with our margarita on the rocks.

Brine your chicken. Whether your baking, frying, roasting or grilling, brine it. Fatima’s been nose deep into The Food Lab. It has the best tips for cooking and it makes a great side kick in the kitchen. So before we did the marinating, we brined the chicken breasts. We now brine all the time because it helps keep the chicken extra juicy.
Now onto these margarita chicken fajitas. Chrissy’s tequila-lime marinade adds so much deliciousness to the chicken. I will use this marinade every time. When we fried the chicken, we used our normal-sized cast iron. It was a messy experience. There’s a reason why she tells you to use an extra-large skillet. So if you have one, use it! This dish also got us to pickle our own jalapeños! It was very easy and I’m glad we did it.
The one thing we couldn’t handle was the sauce. With some of the leftover marinade, you end up boiling it at the end. However, it was a little too salty for us. The fajitas were amazing without the sauce and our chicken was so juicy and flavorful. I was a little hesitant adding in the mushrooms, but they were awesome. Overall, this dish was excellent and another hit in our journey through cravings.
