We’ve been on a fried chicken spree lately. Which means we’ve been hitting the gym a little harder in an effort to make up for that. Last weekend we had a crunchy fried chicken brunch using Fatima’s delicious crunchy fried chicken recipe with chicken breast. We placed the chicken in between buttery, southern-style biscuits and paired them with vegetarian sweet potato hash. On my fried chicken biscuit, I topped it with an egg because it’s not a brunch unless something has an egg on it.

I love a good brunch; good food, drinks, and laughter from friends and family. Oh, and maybe Pandora’s Sunday-Funday Brunch station running in the background rounds out my ideal brunch.

And Fatima’s fried chicken? Well, that makes any fried chicken dish taste amazing. It was delicious on these biscuits, paired with Ashley’s BBQ sauce, with buffalo sauce on pizza, on waffles, and even used to make honey-glazed fried shrimp!
