Close your eyes and think of a time when you were outside during the peak of fall. If you can think of a time when you were in the northeast (dare I say New England?) then you’ll be more in tune to what I’m describing. Feel the crisp autumn air around you, listen to the ruffling of the leaves scraping the road as they tumble away, and the smell of freshly baked apple pie in your kitchen. I just described one bite of these tasty Apple Crisp Cheesecake.
Although our center came out a little too soft (due to an egg beating technique my chef-extraordinaire cousin Vinny said I need to work on), it was awesome. If anyone can get Vinny to go for seconds, then you know you made something pretty darn tasty. Light, heavenly, and very sweet, one bite of this cheesecake and you’ll be hooked. We were looking for a delicious dessert for a party a few weeks ago, and my sister stumbled upon this recipe. In the words of Mob Wives star, Natalie Guercio (we’re hooked), this cheesecake is simply “delicious.”
