Fried Buffalo Chicken Pizza

2 Mins read

Hey everyone! Let me tell you, pizza night just got a serious upgrade. We’re talking crispy, juicy fried chicken, tangy buffalo sauce, and all the cheesy goodness you crave, all piled onto a perfect pizza crust. This Fried Buffalo Chicken Pizza is a game-changer, and I’m so excited to share our recipe (and all my tips!) with you.

Fried Buffalo Chicken Pizza

We’re big pizza fans in this house. Why? Well, a few reasons:

  1. Easy Peasy: Pizza is a fantastic weeknight meal. It’s quick, customizable, and everyone gets involved in the making (and eating!).
  2. Family Fun: Making pizza together is a fun activity for the whole family. It’s a chance to get creative in the kitchen and bond over delicious food.
  3. Tastebud Tango: Let’s be honest, pizza is just plain delicious.

The dough can be the trickiest part, but don’t worry! There are options for every skill level. You can use canned dough for a super quick fix, grab some frozen pizza dough (my personal go-to when I’m short on time), or if you’re feeling ambitious, try making your own from scratch. We’ll often whip up a batch from scratch, but frozen dough is a lifesaver on busy days. And instead of a pizza stone, we’ve discovered that throwing the dough directly onto the cooking rack makes for a wonderfully fluffy, slightly crisp crust. Trust me on this one!

Why This Fried Buffalo Chicken Pizza is So Darn Good

While my all-time favorite pizza is our BBQ Chicken Pizza, this Fried Buffalo Chicken Pizza is a close contender. The secret? Instead of shredded chicken, we use small cubes of Fatima’s incredible fried chicken. Seriously, her fried chicken is legendary. (If you don’t have a Fatima in your life, any good fried chicken will do!) The cubes give the pizza a hearty, satisfying bite that’s just perfect with the buffalo sauce.

Building Your Fried Buffalo Chicken Masterpiece

Okay, let’s get down to the nitty-gritty. Here’s how we assemble this flavor bomb:

  • The Base: Roll out your dough (or use your pre-made dough) and place it directly on the preheated cooking rack in your oven. We bake it at 400 degrees for just a few minutes until it’s starting to get golden.
  • The Sauce: A generous drizzle of your favorite buffalo sauce. We like a medium heat, but you can adjust to your spice preference.
  • The Cheese: Load it up with mozzarella! Don’t skimp on the cheese – it’s what makes pizza, pizza. You can also add some cheddar or Monterey Jack for extra flavor.
  • The Chicken: Arrange those glorious fried chicken cubes evenly over the cheese.
  • The Bake: Back into the oven it goes until the cheese is melted and bubbly, and the crust is perfectly golden brown.

Toppings and Tweaks

Feel free to get creative with your toppings! Here are some ideas:

  • Onion: Thinly sliced red onion adds a nice bit of crunch and flavor.
  • Bell Peppers: Green or red bell peppers complement the buffalo chicken perfectly.
  • Ranch Dressing: A drizzle of ranch dressing after baking adds a cool and creamy contrast to the spice.
  • Blue Cheese: If you’re a blue cheese lover, crumble some on top for a tangy kick.

Tips for Pizza Perfection

  • Preheat Everything: Make sure your oven and cooking rack are nice and hot before you start.
  • Don’t Overload: Too many toppings can make your pizza soggy. Less is often more.
  • Let it Rest: Let your pizza rest for a few minutes before slicing to allow the cheese to set.

This Fried Buffalo Chicken Pizza is a guaranteed crowd-pleaser. It’s the perfect combination of crispy, spicy, and cheesy, and it’s a fun and easy meal to make with family and friends. So, fire up your ovens, grab your ingredients, and get ready for pizza night like you’ve never experienced it before!

Serves: 4-6
Prep Time: 15 minutes Cooking Time: 30 minutes Total Time: 45 minutes

Ingredients

  • Pizza dough (frozen, canned, or homemade)
  • 1.5 lbs of chicken breast
  • 1-2 tbsp Buffalo Sauce
  • 2 cups shredded mozzarella cheese
  • blue cheese or ranch dressing for drizzling
  • 1 small red onion cut in thin strips (or to your liking)
  • Fried Chicken
  • 4 tbsp of flour
  • 20 saltine crackers
  • 2 eggs
  • 2 cups of vegetable oil (or enough to fill your skillet half-way)
  • 1 tsp salt
  • 1 tsp black pepper

Instructions

1

Preheat your oven to your pizza dough's desired temperature.

2

If rolling dough, roll out and flour.

3

Cube chicken breasts and dry the chicken. This will make frying it so much easier. Place on a plate lined with paper towel and another paper towel on top.

4

In a cast iron skillet, heat oil on stove on medium high heat until about 275 degrees.

5

While oil is warming, crush the crackers in a bowl and mix in flour, salt and pepper.

6

In a separate bowl, beat 2 eggs.

7

Dip the chicken into the egg and then roll evenly into cracker mixture. Place a few pieces of chicken into the pan and cook for 10 minutes on one side or until the outside is golden brown.

8

Flip the chicken over and cook 10 minutes on the other side until golden brown. Cook the chicken throughly, making sure it reaches 165 degrees on the inside.

9

If your chicken needs longer to cook, just make sure to turn the cubes about every 2-3 minutes. After chicken is cooked, place on a paper towel-lined plate to absorb excess oil.

Cooking the Pizza

10

Place the dough (if going our method) right on the oven rack for about 8 minutes or until slightly golden brown. This will create a flatbread-type of dough. Check often for any bubbles and burns.

11

Remove dough from oven, and prepare your pizza.

12

In a medium bowl, gently combine chicken with buffalo sauce.

13

Layer cheese on your pizza dough.

14

Place chicken on top, followed by red onion.

15

Add remainder of the cheese.

16

Place back in the oven for about 10 minutes or until the dough and cheeses are golden.

17

Remove and drizzle with some blue cheese or ranch dressing (I prefer ranch on just about anything).

18

Eat up!
