These smores brownie bars are to-die-for. They are an instant classic and will take you back to a time in your childhood on one of your family’s camping trips. While you may be able to make these over a fire, I highly recommend an oven and the use of a kitchen to prep these :).

I used to love camping. Mostly just the times between 5p-9a. I loved sitting around the fire listening to family stories, ghost stories, and even just the crackling fire. I loved waking up early and just sitting outside the camper in silence, with nature as my white noise, bundled snugly in sweats before the summer heat kicked in. Now, I’d prefer to glamping at a beach house over camping the woods any day.

Even when family camping trips evolved into trips to our lake house, I loved organizing the smores. I’d usually help my dad find kindling for the fire and get it started. Then, we’d start to rally for smores. An important tool you must not overlook is a good smore stick from the woods (store-bought sticks don’t count). You needed a stick long enough so your hand would not burn, and sturdy enough to last many rounds of marshmallows. Most importantly, don’t forget to search for sticks while it’s still light out!

The perfect smores are roasted…slowly.

Don’t get me wrong, I love a charred marshmallow, otherwise known as a meteor marshmallow (one that lights up in flames). However, the best smore is made with a roasted marshmallow held just over the fire. This one requires patience and arm strength :). The goal is to get the marshmallow toasted just right so it has a crisp, golden-brown exterior. Inside is a melted ooey-gooey yumminess. It’s hot so the chocolate begins to melt and slips off the stick much easier.

These smores brownie bars are easy to make. I love a semi-homemade dessert. One that’s part (or whole) box mix and all DIY decoration. The graham cracker crust is one you’ll know from a particular cheesecake. A brownie layer is all boxed mix, so choose your favorite. The last layer is a mound of perfectly roasted marshmallows. So, if you can’t get to a campground or beach house this summer, host your own camping trip inside or in your backyard! P.S. don’t forget to bring these along!

Ingredients

  • 15 whole graham crackers (~1.5 packages)
  • 1/2 cup sugar
  • 1 tsp cinnamon
  • 1 stick butter, melted
  • 1 box brownie mix (including ingredients needed to make it)
  • 10oz package of mini marshmallows
  • 1 cup semi-sweet chocolate chips

Instructions

Preheat oven to 350 degrees F.

Line a baking sheet with parchment paper.

Break up graham crackers and add to a food processor. Crush until fine.

Add in sugar and cinnamon. Pulse.

Pour into a small bowl and add in butter. Stir until the mixture is evenly wet.

Push the graham cracker mixture into an even layer in the pan.

Prepare brownie mix per box's directions.

Pour the batter over the graham cracker layer. Delicately spread the batter or tilt the pan to even it out.

Bake for 20-25 minutes or until a knife comes out clean.

Remove the brownies from the oven, turn the oven on broil, and immediately top the brownies with marshmallows and chocolate chips.

Place the pan back in the oven for a few minutes until the marshmallows are golden brown.

Remove from the oven and let sit for a few minutes to cool before cutting and serving.
