No Frills Home Fries

The last meal Fatima ate as a pregnant woman was a plate of eggs, home fries, and a cinnamon roll. It was Mother’s Day and I wanted to make her a Mother-to-be’s Day breakfast. She had a craving for home fries, so I whipped some up.

I can’t eat at a diner without a side of home fries. Neither can Fatima. She loves anything you can make with potatoes: french fries, home fries, mashed potatoes, and potato salad.

No Frills Home Fries

Thank goodness I made such a hearty breakfast for Fatima. Little did we know we were going to meet Liam just 8 hours later. Once we got to the hospital, she couldn’t eat anything other than clear liquids and jello. Luckily these home fries filled her up.

Usually, I’d make home fries with onions, peppers, and other spices, like in my sweet potato hash. Since Fatima’s acid reflux was not going away, I toned this down. Just potatoes, a few spices, and salt and pepper.

  • 1/2 lb mini golden potatoes, cut into bite sized pieces
  • 1 tbsp olive oil
  • 1 tsp Paprika
  • 1 tsp thyme
  • Salt
  • Pepper

  1. Preheat oven to 400 F degrees.
  2. Combine potatoes and olive oil in a medium-sized mixing bowl.
  3. Add a few dashes of paprika and mix.
  4. Add thyme, salt, and pepper and mix.
  5. Spread the potatoes evenly on a cookie sheet and place in the oven for about 30 minutes.
  6. After 15 minutes, turn the potatoes.
  7. Remove from the oven and let cool for a few minutes.
