Magnolia Bakery’s Banana Pudding

If you are not familiar with Magnolia’s Banana Pudding, then get familiar. I did not know about it until someone in the office requested it for their birthday. Even still, I thought, banana pudding? Ew! But was I wrong, it was delicious.

Like the crazy type A people we are Fatima and I started planning for Liam’s first birthday two months ago, right after he turned 9 months. We thought about the theme, decorations, and a whole menu. This way we could get everything out-of-the-way and try to make this a stress-free first birthday. After all, a first birthday is really about the parents, right?

So that’s how we got to this banana pudding.

Seconds, Thirds, Fourths…

My ideal dessert is a cookie, cake, pie, or ice cream. Something sweet and decadent. Besides apple, pumpkin, and sweet potato pie, I’m not a fan of fruits or vegetables incorporated in desserts. But, the bananas did not bother me either. I never thought I’d like something that wasn’t one of those this much. I seriously thought about making it again but I had to restrain myself.

Once you fold the whipped cream into the pudding, it really comes out like mousse. My first layer of the pudding was too thick. Try to space out your pudding so you have some on the bottom and then as the last layer on top. But you should have three layers of pudding, wafers, bananas before you top off with pudding.

Magnolia’s Tips for Banana Pudding

When looking for the best way to make Magnolia’s banana pudding, we came across Delish’s interview with Bobbie Lloyd, Magnolia’s Chief Baking Officer. She offered her best advice to making Banana Pudding.

  1. Gently fold the homemade whipped cream into the vanilla pudding for a mousse-like mixture.
  2. Use a serving dish that’s at least four inches deep. That will help with the ratio of pudding to the other ingredients.
  3. With a four-inch dish, get at least three layers of pudding, wafers, and bananas. Top off with pudding. We used a tall and wide flower vase. All the same :).
  4. The recipe says to chill for at least 30 minutes once assembled before serving. However, you should chill for six hours. Plan ahead!

This recipe is from The Complete Magnolia Bakery Cookbook as found on POPSUGAR. We used tips from Delish's interview with Bobbie Lloyd for the best results. Plan ahead to chill the pudding overnight. Then assemble and chill six hours before serving.

Ingredients

  • 1 1/2 cups ice cold water
  • 2/3 cup vanilla instant pudding mix
  • 1 (14oz) can sweetened condensed milk
  • 3 cups heavy cream
  • 1 (12-ounce) box vanilla wafers
  • 4 bananas, sliced

Instructions

Mix together the water and pudding mix. Then stir in the condensed milk until smooth.

Refrigerate for at least 4 hours, or overnight, until it sets up.

When you're ready to continue, take out the pudding mix.

In a separate bowl, whip heavy cream until soft peaks form (only about a few minutes).

Working in thirds, fold the whipped cream into the pudding mixture until well incorporated.

In a trifle bowl, layer pudding mixture, vanilla wafers, and sliced bananas. Continue until you've used up all the pudding mixture. Top off with pudding.

Refrigerate for at least another 30 minutes before serving.
