Weekend mornings usually include an early visit to the gym, coffee, and breakfast sandwiches. When we’re feeling really lazy, we go to our favorite breakfast/lunch spot, Raspberry’s. It’s kind of wonderful when you walk in and they know exactly what you’re about to order. However, a homemade bacon, egg, and cheese sandwich is Fatima’s specialty.
Fatima knows how to make scrambled eggs extremely well. I’m not sure if I’m allowed to tell you her technique, but it involves slowly cooking the eggs and melting the cheese. I cannot make scrambled eggs to her liking, but we’re getting there. However, we’re trading off and I’m teaching her how to cook my favorite egg, over-easy. But until then, we’ll be cooking our own eggs.
Oh my gawd. Breakfast Sandwiches.
Holy moly. These were fantastic. The recipe makes four sandwiches, and we both ate two. That morning was a pretty intense gym session, so we were hungry. First, let’s talk about the aroma in our kitchen. To. Die. For. You could practically taste what you were about to eat. While these took 20 more minutes than our usual 2 minute sandwiches, they were worth the extra time.
These breakfast sandwiches call for sunny-side-up eggs. I like my eggs a little more contained, so I made over-easy. Since we don’t eat pork, we substituted the pork for ground beef. You can never go wrong with garlic and onions. And the sage pulled it altogether. The sausage patties are so flavorful and bring these breakfast sandwiches to life.
