Every once in a while, Pinterest spits out a recipe I actually want to try. I can’t stand the number of easy gooey-just-like-crack-poke-cakes that are sent to me via the algorithm. Well, maybe I should stop clicking on them to understand what makes them a crake-poke-chicken whatever. Recently, we were in the mood for tacos and these fajita shrimp tacos spoke to me.

I am always down for Taco Tuesday through Sunday and fajitas are my meal of choice. So anytime I can blend the two, count me in. But I recently found out the difference between fajitas and tacos. Fajitas are just the meat with peppers and onions, aka the filling. Tacos are filled with everything under the sun. Meaning, you can fill tacos with fajitas.

If you’re looking for the recipe, you’ll have to go to Number 2 Pencil.

In this case, the filling is shrimp, peppers, and onions. My takeaway from this recipe, it needs more of your favorite things to fill them up with. We just did fajitas in the taco, so it was definitely missing the lettuce, pico de gallo, guacamole, etc. Important not to forget that step! We know better now 🙂

What I love about this dish is that it’s a one-sheet meal. Prep it all, put it on one baking sheet, and pop it in the oven. I love a good one-sheet meal.
