I love everything about this cobb salad: the dressing, the flavors, and the hint of spice. I love how it makes me feel like a Kardashian with a never-ending bowl of salad. While there’s a bit more prep than your typical salad, it’s so worth it.

Since we’re both working from home, we build in lunch and dinner prep at the beginning of the week to make our days run a little smoother. With a two-year-old running around, we’ll take all the time savings we can get! While we do stick to our usual lunch plans of basic sandwiches, local eateries, and smoothies, we try to mix it up. This cobb salad is typically a dinner go-to, but it makes a great lunch, especially now that the heat of summer has arrived.

It’s true. You can’t get through an episode of Keeping Up… without watching one of them chow down on a large bowl of lettuce. Every time I watch, I want a salad, usually this salad. Seriously though, I’m writing this post and planning out meals for the week and 90% sure it’ll include this salad. The honey mustard ranch dressing is one of, if not the star of this salad. It’s creamy, ranch-y, mustard-y, a little spicy, and just yummy.

This pandemic really sucks. Are stay-at-home orders, masks in public, and social distancing needed? Absolutely. But it doesn’t change the fact that it sucks, and don’t get us started on our country’s response. However, we do what we need to do to get through it. We stay home, we wash our hands, and if that means making fancy salads for lunch, then we do it.
