Our third post for Full Plate! We were so excited to talk about one of the best fried chicken sandwiches, we forgot to introduce this new series to you! You know how much we love Chrissy’ Teigen’s cookbook franchise, Cravings? Now we have a new cookbook from Ayesha Curry we get to cook through. We’ve already made a handful of things from the book and a lot more we want to get to. But let’s discuss this pineapple chicken and turmeric cauliflower.

There are times when all I want to eat is Cheerios for breakfast, lunch, and dinner for two weeks straight and there are times where I need to have something different for every single meal. The week we made this pineapple chicken and turmeric cauliflower was the latter. I’m not really sure what made us jump to this recipe, but it looked really good and we were in the mood for something new.

Bone-in, skin-on chicken thighs intimidate me. I am not a fan of bone-in chicken. I love wings, but make them boneless. And the skin? I love it, but I’m afraid of making it too soggy. But we were in the mood for something new so I let Ayesha take the wheel.

TBH, I was also a little skeptical of the cauliflower. I love some of the cauliflower dishes we’ve made, but that raw shit stinks. Once I can get past prepping the cauliflower heads, then we’re golden. And I thoroughly enjoyed the turmeric spiced cauliflower.

What I love most about this meal is the chicken and cauliflower roast in the oven together, in separate pans. It makes dinner night so much easier to manage! Do you have a favorite weeknight recipe you keep going back to? Let us know in the comments!
