Homemade Brown Sugar Cinnamon Pop Tarts

Pop tarts bring me back to my school days. Strawberry pop tarts were my jam (pun intended). However, brown sugar cinnamon pop tarts were my #2 favorite. I loved toasting them long enough so the non-frosted parts were just about to turn golden brown. I’d pick the sides off, eat them first, let the pop tart cool, and then eat the rest. I know, I’m a weirdo.

When Fatima was pregnant, we fell into a pop tart binge. Truly it was a binge. One shopping spree, someone should have asked if we were sponsoring pop tarts because of how many boxes we bought. She was craving them and I was not getting in her way. Since our son was born, we’ve had them a few times and he seems to love them.

The problem is, however, in our old age we’re getting acid reflux or heart burn from them. When I was in the store a few weekends ago, I passed pie dough and thought, ‘let me try to make pop tarts, maybe homemade will save me from acid reflux.’

How to make your own brown sugar cinnamon pop tarts

These are so easy to make. Listen, if you love making pie dough and are good at it, you do you. But we’re using store-bought pie crust. I made pie dough from scratch twice in my life. I think I do like the homemade crust better, but it’s such a to-do, especially for pop tarts. The store-bought dough is completely OK.

All we really need for these brown sugar cinnamon pop tart are pie dough, cinnamon, sugar, butter, eggs, and confectioner’s sugar for the glaze. I tried to cut perfect rectangles to make a classic looking pop tart, but I found I love the amorphous ones the best. There’s a homemade, rustic look to them.
