Bacon, Hash Brown, Egg and Cheese Wrap

I don’t know about you, but I’m still recovering from daylight savings. Before kids, my days would start anywhere between eight and ten in the morning. Now, our days start anywhere between five and seven in the morning. When we’re up that early in the winter, it’s total darkness. This hour of light in the morning is so welcome, but why am I feeling more tired!? Along with my caffeine, waking up with a bacon, hash brown, egg, and cheese wrap is the easiest way to jumpstart my morning.

One of our Sunday morning rituals was running around the corning to our favorite bagel place, (Bagel Express RIP!) to grab bagels or egg and cheese sandwiches. We’re still on the hunt for a new favorite breakfast place, but at the moment, we’re using some of our favorite products from Trader Joes.

Making the bacon, hash brown, egg, and cheese wrap

We love turkey bacon. That’s our bacon of choice. The hash browns? Trader Joes; they’re amazing. And cheese? Boar’s Head all day every day.

You can make this a few ways: in a wrap, on a roll, on a bagel, or bread-less! I’ve made this all four of those ways, but I prefer a wrap, roll, or bagel. We also love to make this with avocado.

Egg and Cheese Wrap

Ingredients

Scale
  • 2 eggs
  • 2 slices American cheese
  • 1 hash brown patty
  • 2 slices of bacon
  • 1 burrito wrap
  • Optional: avocado

Instructions

  1. Preheat oven to 400 degrees F (or according to your hash brown packaging).
  2. Heat skillet on medium-low heat.
  3. Once oven is heated, place a frozen hash brown on a cookie sheet and bake for 14 minutes (or according to your packaging). Flip halfway through baking.
  4. While hash brown is cooking, cook bacon in the skillet.
  5. When bacon is done, remove from skillet and crack eggs into the skillet. Scramble.
  6. Flip eggs, layer with cheese, and cover until cheese has melted. Add a little water to melt cheese faster.
  7. To assemble the egg and cheese wrap: Layer bacon, then hash brown, avocado if using, then scrambled eggs with cheese.
  8. Wrap burrito, and place in the skillet on low heat to brown the seal. Flip to the other side and brown.
  9. Slice in half and serve with ketchup, sriracha, or combination of the two.
