Pumpkin, pumpkin, pumpkin! What a dessert. If you love pumpkin as much as we do, then you’ll love these pumpkin bread truffles. Literally melting in my mouth – literally, I’m eating one right now. We’ve taken pieces of pumpkin pie, pumpkin bread, infused some chocolate and voila! Pumpkin Bread Truffles.
The basic foundation is pumpkin bread. So feel free to follow our recipe below, or use your own. The middle is a mixture of graham cracker and cream cheese, and then topped with a thin layer of chocolate. These will melt in your mouth. You’ll be the most popular dessert at your next party.
- 2 cups all-purpose flour
- 2 teaspoons cinnamon
- 1 teaspoon baking soda
- 1/4 teaspoon baking powder
- 1/2 teaspoon salt
- 1 1/2 cups sugar
- 1/4 cup vegetable oil
- 3 large eggs
- 1 teaspoon vanilla extract
- 3 cups shredded fresh pumpkin
- 1 individual wrapped package of graham crackers
- 8oz of softened cream cheese
- 2 cups melted chocolate chips
- Few handfuls of mini chocolate chips
- Preheat oven to 325 degrees.
- In a large bowl, you’ll want to mix all ingredients (flour through pumpkin) in a large mixing bowl.
- Remember how we floured my sister’s cake? Let’s do that again. We used a 9×13 pan. Pour the batter into the pan.
- Place in the oven for about 30-40 minutes (or until your knife comes out clean). When it’s done, take out and let it cool off.
- Crush up your graham crackers and mix in with room temperature cream cheese.
- Gently, spread the graham cracker mixture over the pumpkin bread.
- Melt your chocolate chips for 30 seconds at a time and pour over the top of the graham cracker layer. Sprinkle with chunks of chocolate or miniature chocolate chips.
- Let the chocolate set before eating.
