Lasagna is amazing. It’s comforting, cheesy, and always a hit. But let’s be honest, slicing into a big pan of it can turn into a mess real fast. That’s where Lasagna Rolls come in. This recipe was actually a happy accident. Fatima and I were making lasagna, and she started rolling up the noodles with cheese instead of layering them. At first, I was like, What are you doing?! But then, I figured, why not? And just like that, lasagna rolls were born in our kitchen. They turned out so good, I knew I had to share them. For these lasagna rolls, we used the sweet pepper sauce we featured last week.

Description

A twist on a classic sheet of lasagna.


Ingredients

Units Scale
  • 16 oz Ricotta Cheese
  • 12 cups spinach
  • 6 lasagna pasta strips
  • Sliced mozzarella cheese (1 per roll)
  • Your favorite red sauce

Instructions

  1. Preheat the oven to 350 degrees.
  2. Fill a large pot 3/4 full of water and place over high heat. Season with salt.
  3. Once it starts boiling, add lasagna pasta strips and cook until they’re done.
  4. Meanwhile, mix together ricotta cheese and spinach, and any other cheeses or flavors you want.
  5. Roll it up.
  6. Place in a baking pan, cover with red sauce, cheese and place in the oven for 20 minutes.
  7. Remove from the oven once the cheese starts bubble, and serve warm.
