I could have a margarita (in my case a MarquisRita) any day of the week. So yummy. I took that love for MarquisRitas and turned it into a cupcake; MarquisRita aka Margarita Cupcakes! They came out better than expected. The recipe is a simple “1-2-3-4” basic cupcake/cake mix with an addition of tequila and lime. The batter makes a lot of cupcakes, I got about 3 dozen cupcakes. I’d probably cut it in half next time – so many!
As I experimented with the tequila in the batter, I noticed it didn’t really mix into the cupcakes that well, so as you’re pouring the batter into the cupcake holders, mix up your batter after a few fillings. They were delicious. They had just the right amount of tequila flavoring – enough to taste it, but not too much that you’d squish your face in after eating. I whipped up a simple lime frosting, and voila – a MarquisRita dessert.
- 1 cup butter
- 2 cups sugar
- 3 cups cake flour
- 3 tsp baking powder
- 1/2 tsp salt
- 4 eggs
- 1 cup milk
- 1 tsp vanilla extract
- 1 tbsp tequila
- ¼ cup of softened butter
- 2 cups of confectioners sugar
- Few drops of lime juice
- Preheat oven to 350.
- Cream butter and add sugar, until fluffy.
- Add in eggs one at a time.
- In another bowl mix together flour, baking powder, and salt.
- In another smaller bowl, mix together mix and vanilla.
- Add flour mixture alternately with milk mixture to the butter (ending with the flour), beating after each addition until smooth.
- Gradually add tequila to the batter, mix and taste (DISCLAIMER: EATING RAW DOUGH MAY NOT BE GOOD FOR YOU – EVEN THOUGH I COULD EAT A WHOLE OF IT). I added a few drops, mixed and tasted. I did this until I could just taste some tequila. Try not to add too much!
- Pour batter into liners in cupcake pans, mixing after a few fills to mix up the tequila. Bake for 15-20 minutes). Cool in pans and remove from pans to finish cooling.
- For the frosting: Combine ¼ cup of softened butter and 2 cups of confectioners sugar in a bowl.
- Add in a few drops of lime juice, mix, and taste to see if it’s too much lime. Add in additional drops if desired. I added green food coloring for an accent.
- Frost the cupcakes once they are completely cooled.
