Fall is our favorite season. Growing up in New England, I loved experiencing the changes in the leaves, the crunch they make when you step on them, and the cool, crisp air. My family’s annual Halloween Party this year is Harry Potter-themed. It has been so much fun to plan. I think it will be our most Pinteresting Halloween Party, yet!
We wanted to experiment with some of the internet’s greatest Harry Potter themed dishes before having to make everything the day of the party. Circling around the internet, we landed on a recipe for Pumpkin Pastries. We first see this popular snack on the Hogwarts Express. However, we ended up making equally delicious sweet potato pastries. We made a savory one and our own sweet version.
Fatima and I are huge Potterheads. Although, I’m in denial that my Patronus is a wild cat. For our one year wedding anniversary last year, we went to the Wizarding World of Harry Potter in Universal Orlando. It was an amazing adventure.
We initially planned to make both pumpkin and sweet potato pastries. However, we ran into an issue with the pumpkin. We started out roasting the pumpkin, following this recipe. After about 45 minutes, the pumpkin was tender and ready to come out of the oven. I let it sit for about 5-10 minutes to cool slightly, and then scooped out the flesh. I began to mix together the pumpkin with the butter and it came out way too watery. I continued to mash it hoping it would firm up. After adding flour to try to thicken the mixture, I had to give up. Thankfully we also planned on using sweet potatoes!
The savory pastries exceeded my expectations. At first, we were skeptical of the combination of garlic and white cheddar cheese with the sweet potato. However, they were delicious! The sweet ones were just as delicious, see below for the recipe. For the savory recipe, head over to POPSUGAR.
We based our sweet potato filling off of Fatima’s sweet potato pie recipe. We ended up using store-bought pie crust because we had a lot going on the in kitchen. However, feel free to use your favorite pie crust recipe!
Sweet Potato Pastries
Ingredients
- 2 sweet potatoes
- 4 tbsp of butter
- 1/2 cup brown sugar
- 4 tbsp of white sugar
- 1 tsp of cinnamon
- 1/2 tsp of nutmeg
- 2 9-inch pie crusts (from scratch or store-bought)
- Egg wash (1 raw scrambled egg + splash of water)
Instructions
Fill a medium sized pot up with water (little more than halfway), place on the stovetop over high heat and let it come to a boil.
After about 40 minutes or until they are tender and a fork can go all the way through, remove from heat and drain the pot.
Carefully scrape off the outer skin.
Preheat the oven to 400 degrees.
Add the potatoes to a medium sized mixing bowl with 4 tbsp of butter.
Mash up the potatoes and butter. They should feel like mashed potatoes.
Stir in the remaining ingredients (sugars and spices).
Lay out the pie crusts and cut them in half.
Scoop the sweet potato filling onto the four pie crusts. We could have scraped together a 5th pastry, but it would have been a little leaner than the others.
Fold over the extra pie dough and press the seams firmly together. Press a fork over the seams to make a pie-like design.
Move the sealed pastries over to a baking sheet and brush the egg wash over the pastries.
Bake for 25-30 minutes or until the pie crust begins to turn golden brown.
Remove from the oven, move to a wire rack, and let sit for 10 minutes to cool.
