Having a picnic doesn’t need to be fancy, but switching up your bread or what you put on your sandwich can make it seem fancy. We’ve been on an avocado kick lately – maybe due to the impending shortage? We’ve been using it in all of our recent salads, having taco nights more frequently, and used it on sandwiches.
Avocado, while high in calories, is a power food. It’s incredibly nutritious, loaded with heart healthy monounsaturated fatty acids. Did we mention it’s delicious on almost everything?
Our turkey avocado sandwich was simple: mini baguette, turkey, tomato, and avocado, mayo on the side. When thinking about lunch this week, or your next picnic, make this incredibly refreshing summer sandwich. For increase in cuteness factor, wrap then in parchment paper and twine.
