Overnight Oats: Toddler Food

For someone who has only about 8 months of solids under his belt, our son is quite the picky eater. He has his favorites, but he does not like to have the same thing too often. Anything with consistency or on a schedule and it won’t work for him. However, we can always count on these overnight oats as a favorite.

Breakfast is the most important meal of the day, right? When our son wakes up, we want to jumpstart his day with a hearty meal. He’s always loved oatmeal. However, we were getting a little tired of oatmeal being the breakfast staple every day. And by ‘we’ I mean Liam. So we flipped through our cookbook and landed on these overnight oats.

These overnight oats are simple: oats, seeds, nuts, prunes, dried fruit, whole milk, and greek yogurt. What I love most about them is they are made the night before, so you don’t have any prep to do in the morning!

If I can prep anything before I need it, I will. If I can save time down the road through meal prep, I appreciate the extra time later. I think that’s the secret to a successful life-work-flow. When we wake up in the morning to our alarm clock, aka our son, we’re either early 5:30a-6a, just right 6:30a-7a, or late 8a. When it’s the latter, we are scrambling to get up. It’s a mad race to get Liam ready for the day, feed him breakfast, and pack his bag, while we try to have coffee, make lunches for all of us, and get ready for work. If we get up late and everything’s already made, then life appears less hectic.

When soaked overnight, these oats are creamy and delicious; they’re even a solid base for the adults. I caught myself eating some leftovers. Don’t be surprised if you see this recipe adapted in the near future. Top with honey or maple syrup before serving, and you have a great breakfast meal your toddler will enjoy.

Ingredients

  • 1 3/4 cups rolled oats
  • 1/4 raw, unsalted sunflower seeds
  • 1/4 cup finely chopped pecans
  • 1/4 cup chopped pitted prunes
  • 1/4 cup dried cherries
  • Pinch of salt
  • FOR SERVING:
  • 1/2 cup muesli (dry mix)
  • 1/4 cup plain greek yogurt
  • 1/4 cup milk
  • 1/2 tsp honey or maple syrup

Instructions

In a medium bowl, combine oats, sunflower seeds, pecans, prunes, cherries, and salt.

The night before, stir together 1/2 cup of the dry mix with a 1/4 cup plain greek yogurt and a 1/4 cup of milk.

Cover and store in the refrigerator overnight. Store the remaining dry mixture in an air-tight container.

Drizzle a little honey or syrup and serve.

Notes

The dry mix to whole milk/greek yogurt is 2-1-1. So make this as small as you need. We usually cut this in half since our son gets full quickly.
