Onion Rings: Cooking Through Cravings

I’ve never been able to make rings, until now. Every attempt leads to failure. While looking for something to make for our cook-in dinner, I consulted our Cravings cookbook and I landed on these onion rings.

Since we were staying in for Fourth of July, I proposed a cookout-themed meal. It was just the two of us, so we kept it simple: burgers, potato salad, onion rings, watermelon slices, and margaritas. We were going to make french fries, but I was in the mood for onion rings.

Some of the best onion rings I have are at seafood restaurants. Those little hole-in-the-wall shacks you pull up to get for a lobster roll or fried clams to-go. The shoreline of Connecticut is peppered with these kind of places. One of my favorite places (bigger than a shack) is Bill’s Seafood and Restaurant in Westbrook, CT. Everything there is delicious, even the cocktails. Not a seafood restaurant, but if you venture farther into New England, Ellacoya Barn and Grille in Gilford, NH has an amazing onion ring tower.

The secret to really good onion rings is the cut of the onions and the breading.

And being a little greasy. Cravings delivers the kind of onion ring you dream of, well at least what I’ve dreamed of. However, I have to admit the pictures here do not do these justice. I was running out of daylight and functioning on an empty stomach and margaritas.

Since I’m banned from frying anything, Fatima made these. The breading was really easy to put together. The only thing that takes time here is the frying. However, that’s only about 3 minutes for each batch.
