Kale Super Smoothie

Thanksgiving is upon us and most of us will enjoy turkey, a bunch of savory side dishes, and pie. I think I love next-day Thanksgiving food more than day-of. I love chilled apple or pumpkin pie for breakfast, turkey sandwiches layered with sides for lunch, and constant snacking on Brussels sprouts, greens, and butternut squash, and other sides all day. But soon the leftovers are no more and the feeling of hunger disappears for a few days. It’s usually at that point over Thanksgiving weekend I feel like I need a detox; to just shove a bunch of kale or raw vegetables down my throat. That’s where this kale super smoothie comes in handy.

A few months ago we discovered a local spot that serves açai bowls, smoothies, and other healthy food. I got a bowl with cookie butter and this kale smoothie. It was so good. The cookie butter was delish, but the smoothie exceeded my expectations. I saw ‘kale’ and immediately turned my nose up to it. However, it was delicious. While our ingredients a little different, I wanted to try to recreate this smoothie as best I could.

I love smoothies that require almost no effort. It helps to have a Nutribullet or some kind of blender that easily churns everything together. We’ve had our Nutribullet for almost 6 years and we love it. I can’t tell you how many smoothies (and margaritas) we’ve blended. Some of our favorites include the cold buster smoothie and our sweet green smoothie. What’s great about all of these is you drop in five ingredients and blend.

Kale Super Smoothie

For this kale super smoothie, it’s important to add in honey or agave; something sweet to counterbalance the kale. Sometimes I forget to add in honey and it’s noticeably missing. Our smoothie differs slightly from the health food restaurant. They use almond milk and we use greek yogurt. They add in a few more things, and ours is pared down to a banana, mangos, kale, greek yogurt, orange juice, and agave.

When you have a day of eating dirty, whip up one of these smoothies and start to feel healthy again.

Ingredients

  • 1 banana, peeled
  • 1 cup mango, skin removed and cut into 1/2 inch cubes
  • 2 cups kale
  • 1 greek yogurt
  • 1 cup orange juice (sometimes a splash more if too thick)
  • 1 tbsp agave or honey

Instructions

Add ingredients into a blender and churn until smooth.

Drink immediately or place in the fridge to chill.
