Our boozy popsicles were a lot of fun to make. These huckleberry lemonade popsicles are based on one of our favorite summer cocktails. For more boozy popsicles, check out this post!

Heads up! You’ll want to make these the day before. The popsicles should sit in the fridge for about 12 hours to set. In need of a popsicle maker? Here’s the one we have!

Huckleberry Lemonade Popsicles

Description

A twist on a classic cocktail.


Ingredients

Units Scale
  • 1 tbsp Mint simple syrup: 1/2 cup water, 1/2 cup sugar, 10 mint leaves
  • 1 1/2 cups Lemonade
  • 2 shots Huckleberry vodka
  • Mixed berries (optional)

Instructions

  1. Soak popsicle sticks in warm water for about 30 minutes. This will help them from floating out of the popsicle mold.
  2. For the simple syrup, add water, sugar, and mint leaves to a small pot and bring to a boil. Stir occasionally until the sugar dissolves. Remove from heat and set aside.
  3. Combine all ingredients in a bowl, except for the berries (if using), and stir together.
  4. Drop a few berries in each mold. Pour mixture into the popsicle molds, cover, and place in the freezer for about 12 hours.
  5. Remove them from the freezer to eat, otherwise keep them frozen!
