Brunch is in season all year. However, I like to think the season resets every spring, somewhere around Easter and Mother’s Day, and then winds down after Christmas and New Year’s. And let’s be honest: brunch just isn’t brunch without a mimosa or another sparkly champagne cocktail.

Description

Here’s the recipe I use on repeat all summer long. It’s easy, crowd-pleasing, and totally customizable.


Ingredients

Units Scale
  • 1/2 can of frozen orange juice concentrate
  • 3/4 blender of ice
  • 1/2 cup orange juice
  • 3/4 cup triple sec (or your favorite orange liqueur)
  • Prosecco (Champagne or other sparkling wine

Instructions

  1. Fill your blender ¾ of the way with ice.
  2. Add the frozen orange juice concentrate.
  3. Pour in the orange juice and triple sec.
  4. Blend until smooth, like a grown-up smoothie.
  5. Pour the frozen mimosa base into glasses about ¼ full (or less, if you prefer a stronger Prosecco or champagne flavor).
  6. Top off each glass with chilled Prosecco or champagne.
  7. Serve immediately with a slice of orange or a sprig of mint for that brunch-y flair.

Notes

Pro Tip: While it would be easier to make the base ahead of time, it’s best made in the moment. I can’t get the consistency to stick, even when I put it back in the freezer.
