We heart brunch. Our favorite kind of brunch is when we make it in our own kitchen. This morning, we made a delicious plate of fried chicken and waffles using just a few ingredients. Super simple and a great way to step up your DIY brunch game.
Fried Chicken and Waffles
Ingredients
- Waffles - for a quick step, use your favorite boxed brand
- 1 tbsp sugar
- 1/2 tsp vanilla
- Fried Chicken
- 2 chicken breasts cut into bite-sized pieces; or drumsticks
- 4 tbsp. of flour
- 20 saltine crackers
- 2 eggs
- 2 cups of vegetable oil ( or enough to fill your skillet half-way)
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp paprika
Instructions
Waffles
Preheat oven to 250 degrees F.
Make your boxed mix per the instructions.
Optional: throw in a dash of sugar and vanilla to elevate the taste.
Make waffles.
As they are being made, place completed waffles on a cookie sheet and place in the oven to keep them warm.
Continue until all waffles are made.
Fried chicken
To help dry the chicken, place it on a plate lined with paper towel and another paper towel on top.
In a cast iron skillet, heat oil on stove on medium high heat until 275 degrees.
While oil is warming, crush the crackers in a bowl and mix in flour, salt, pepper, and paprika.
In a separate bowl, beat 2 eggs.
Dip the chicken into the egg and then roll evenly into cracker mixture.
Place a few pieces of chicken into the pan and cook for 4-8 minutes or until the bottom is golden. If using drumsticks, you'll want to cook for about ~10 minutes on each side.
Flip and cook for another 3 minutes.
After chicken is cooked, place on a paper towel-lined plate to absorb excess oil.
Repeat with all bite-sized pieces.
Plate a waffle, butter it, top with chicken, and drizzle with your favorite syrup.
