Cake Donuts and a three-year-old!

Oh my goodness, we have a three-year-old! How is this possible? Where did the time go? How much longer will he be my baby? For his birthday this year, we celebrated with all of his favorite things under the theme: One, Two, Three…hit it! Donuts, cake, pizza, Word Party, balloons, music, dancing, and trains. And the cake? Cake donuts!

For our family portraits, we cozied up in some tie-dye sweats. This is one of my favorites so far. For Liam’s portraits, we recreated some top album covers. He is such a little model!

We spent the day riding the subway on all the above-ground lines. Our son loves trains and when we asked what he wanted to do, he said, “I’d like to ride the train, please.” We asked him that a few weeks ahead of his birthday and it was the only thing he could talk about leading up to it.

Liam loves to help me bake. He’s the perfect assistant pastry chef and does all the measuring, pouring, and stirring. After riding the trains, we made his cake together.

To make these cake donuts, we used a mini bundt pan and a boxed cake mix. All you have to do is make the cake batter per the instructions, pour into the mini bundt cups, and bake! We got 8 cakes out of this pan. To make the frosting look like donut icing, just zap it in the microwave. We used one can of vanilla frosting, split into thirds. We colored two-thirds (one blue and one green), and left the last third white. After frostings, throw some sprinkles on them, and voila!

Description

A cute take on a cupcake.


Ingredients

Scale
  • Boxed cake mix + all the ingredients on the box (like eggs, vegetable oil)
  • 1 container of vanilla frosting
  • Frosting dye
  • Sprinkles!

Instructions

  1. Preheat the oven to 350 degrees F (or following box instructions).
  2. Grease and flour the bundt pan, set aside.
  3. Dump the cake mix and ingredients into a large bowl or stand mixer. Beat it all on medium for about two minutes.
  4. Fill bundt cups with cake batter, about 3/4 of the way up.
  5. Place in the oven and bake for 15-18 minutes or until a knife comes out clean.
  6. Set aside to let cool for 10 minutes. Remove to wire racks and cool completely (~30 minutes).
  7. If you’re coloring the frosting, divide and color in microwave-safe bowls.
  8. Place a bowl of frosting in the microwave and zap for about 10-15 seconds. Stir until the frosting is like a smooth glaze.
  9. Spoon over frosting onto cakes to replicate a frosted donut. Be creative and messy!
  10. Sprinkle immediately before the frosting cools!
