Next time you make pancakes (boxed or from scratch) try adding in some oatmeal (and chocolate chips). Some people’s faces cringe when I tell them I put oatmeal in pancakes or waffles, like my family. One time at the lake house, I added in oatmeal to pancakes, served up a delicious brunch spread, and told them oatmeal was a secret ingredient after their plates were empty. They never tasted a thing.
The banana oatmeal chocolate chip pancakes recipe below is geared more for complete mixes (just add water). With two kids, I don’t have the time to make pancakes from scratch. But experiment with your own recipe from scratch or use this one as a base.
Making the Banana Oatmeal Chocolate Chip Pancakes
To add in oatmeal to pancake or waffle mix, you want to add about a half cup to a whole cup for every batch. So if your box says it makes 8 pancakes, add in a half cup of oatmeal. If you are doubling your recipe, obviously double the oatmeal. For a more oatmeal taste and texture, try adding closer to a cup. For Liam, I kept it at a half cup per batch because he has a very discerning palette. You’ll want to leave the oatmeal in the pancake mix to sit and soak a little, too. Reassess and add more water if needed (especially if using a complete mix).
Want to add in a banana? Of course you do, you came to this banana chocolate chip oatmeal pancakes recipe. Mash up one banana for every batch. You can try to do straight up slices, but again, Liam will see it and be turned off. I like it all hidden. Well, sort of hidden because he can taste the banana. Add more sliced bananas on top.
Lastly, add in chocolate chips. We use dark chocolate chips because the bananas and syrup make the plate very sweet, but go for semi-sweet chips if you prefer. When I add chocolate chips to pancakes, I drop them in on each pancake on the griddle and push them down into the batter. Sometimes if I don’t, and I flip the pancake, the chips burn a little.
Bonus – maybe you’re looking for flaxseed? Add 1 tbsp of flaxseed to each batch. Add a little more water as needed.
Banana Oatmeal Chocolate Chip Pancakes
Make these delicious pancakes with bananas, oatmeal, and chocolate chips. Completely optional: flaxseed.
Ingredients
- Box of Complete Mix (see instructions for how much mix) - we use Krusteaz
- Water (see boxed pancake mix for how much water)
- 1 banana, mashed, for every batch of mix
- 1/2 to 1 cup of oatmeal
- 1/2 cup or less of dark chocolate (or semi-sweet) chips
- Optional: 1 tablespoon of flaxseed
Instructions
Make the complete mix according to the box directions.
Preheat griddle or skillet according to the directions.
Take note of the consistency.
Mix in the mashed banana.
Add in 1/2 cup of oatmeal and stir. Note the consistency and add more water if necessary (moreso if you're adding upwards of a full cup).
Optional: add in the flaxseed.
Let the mix sit for about 15 minutes to let the oatmeal soften.
Take note of the mix's consistency and add a little more water as needed. In total I may have added about 1/4 cup extra water when I added in a full cup of oatmeal.
Pour 2/3 cup batter on the griddle/skillet.
Drop some chocolate chips in the pancake batter on the griddle/skillet and push them into the batter.
Flip when bottoms are golden brown (usually when the bubbles and holes are done).
Remove from the griddle after a few minutes or until the bottom
