I love apple cider donuts. Usually, by now I’ve had at least a dozen however, I’ve had zero. I haven’t been able to get up to some of our favorite spots in Westchester and I haven’t found a local spot that sells quality apple cider donuts. When I saw BonAppetit tweet about their ‘best’ apple cider donuts, I knew I had to make them myself.

They were delicious. However, I think I fried them thirty seconds too long. When it comes to frying desserts, every second matters. My ban on fried food has been lifted. So far, no burns and no fires. It’s been a while since the last time I fried something and I was a little nervous. Frying these apple cider donuts was so easy. As long as you have a large pot and a candy/deep-frying thermometer, you should be golden.

Tips for making the Apple Cider Donuts

I recommend making the dough for the night before you want to fry them. It’s an involved process including making your own apple cider syrup and chilling the dough for at least three hours. Don’t wait until the morning you want to eat them to make the dough, so plan ahead!

  1. As I said, the dough is an involved process. Apple cider and cinnamon sticks will sit in a skillet for 30-40 minutes until it becomes thick and syrupy. I let this cook a little too long the first time, and I ended up with rock hard syrup. I had to spend another 30-40 minutes making another apple cider syrup mixture. The minute it starts to thicken, pay attention because it may be ready.
  2. I recommend measuring everything out. This way, once the apple cider syrup is done, you can swiftly move onto the dough. After that, combining all the ingredients is pretty easy.
  3. The dough is very sticky per the recipe. So generously flour the pan and your hands.
  4. Get a deep-frying thermometer. You need to know how hot your oil is before you start frying. Too hot and your donuts will cook too quickly.
  5. Let the donuts cool slightly before handling in the sugar! Don’t burn your hands.
