In our house, we’re down for tacos wherever, whenever. Taco Monday, Taco Tuesday, Taco Wednesday, Taco any day! We’ve made fish, chicken, vegetables, you name it. On our journey to change up our tacos, we fried up some chicken and drizzled a luscious garlic ranch sauce all over them. They were a hit.
We even just purchased a new book, Dragons Love Tacos, for Liam. It’s now one of my favorite books to date.
I really don’t know why I love tacos so much. Sure, they’re fun to make and they always taste great. But maybe I love them because each one on your plate can be unique. Oh, and they pair well with margaritas. And we’re not the only ones. Apparently, Americans consume over four BILLION tacos a year (NationalTacoDay.com).
Fried Chicken Tacos, Garlic Ranch Sauce, and all the Fixin’s
To make the tacos pictured here, we used fried chicken bites, pickled onions, lettuce, tomatoes, slices of jalapenos, avocado, and garlic ranch sauce. We squeezed lime over everything. It took a few different recipes to bring these together:
- Garlic Ranch Sauce – this sauce is the most delicous and I will be making this so many more times.
- Fried Chicken – use the breading recipe on bite-sized pieces of chicken breast. You may only need one or one and half pounds of chicken breast.
- Pickled Red Onions:
- 1/2 cup red wine vinegar
- 2 tbsp sugar
- 1 1/4 tsp salt
- 1 medium red onion, sliced into strips
- Instructions: combine red wine vinegar, sugar, and salt in a container with a lid (preferably a jar like a 16oz mason jar). Stir the mixture really well, or screw the lid on and shake, shake, shake. Carefully drop in the red onion slices and push them down to submerge in the liquid. Cover and place in the fridge for at least 2 hours or overnight (preferred).
