A few weeks ago, my cousin Lisa and her Grammy Award-winning fiancé, Peter, flew into Connecticut from Hawaii to do some wedding planning before the big day! We’re so excited to head out to Hawaii next year! Part of their trip included celebrating Nana’s ’92+2′ birthday and coming down to NYC to visit me at work!
Not that they completely inspired this dish, but we were looking for a way to dress up some BBQ fried chicken. In an effort to use some leftovers waiting in the fridge, we landed on these Hawaiian BBQ Fried Chicken tacos. We had most of these ingredients except for the tortillas and the pineapples.
This was a simple recipe to whip up. Fatima made the fried chicken using her uber-famous fried chicken recipe and we brushed on some delicious BBQ sauce (recipe courtesy of Ashley). Once the chicken is made, all you need to do next is throw on some lettuce, cilantro, onions, and pineapple, roll up the tortilla, and eat! The combination of pineapple and the BBQ sauce gave the tacos a tangy, sweet experience. These were very refreshing!

- 1/2 cup of your favorite BBQ sauce
- 1 small can of Dole pineapples, chopped
- 1/2 red onion, chopped
- 1/4 cup chopped cilantro
- 1/4 cup shredded mozzarella cheese
- Mixed greens, lettuce, or spinach
- 6 medium-sized (fajita) flour tortillas
- Using Fatima’s fried chicken recipe, fry up your cubed chicken.
- On low heat, heat up BBQ sauce in a small sauce pan and toss in your chicken to coat.
- Using 1 tortilla, stack your ingredients; lettuce/greens, chicken, cheese, pineapple, onions, and cilantro.
- Roll them up like a taco and eat!
