Ingredients

- 2 packs Strawberries (16oz each)
- 3 tbsp lemon juice
- 1/8 cup white sugar
- 1 tbsp apple cider vinegar
- 1 tbsp olive oil
- 1 cup chopped walnuts
- 1/4 cup brown sugar
- 1 tsp cinnamon
- 1 tbsp butter
- 1 bag of baby spinach
- 1/4 cup goat cheese
Instructions

- First, prep the dressing. This way you can place it in the fridge while you’re making the rest of the salad.
- Cut the tops off of 1/2 of one of the packs of strawberries and place into a blender.
- Add in lemon juice, white sugar, apple cider vinegar, and olive oil. Blend until it’s liquified.
- Place the dressing in a jar or container and store in the fridge.
- Place a skillet over medium heat.
- Add butter to the skillet and melt.
- Add the walnuts and toss to coat.
- Sprinkle in the brown sugar and cinnamon. Toss to coat.
- Stir around for 4 minutes until you see the sugar begin to liquify.
- Remove walnuts from skillet and lay out on a paper towel or cookie sheet to cool.
- Chop up remaining strawberries.
- Mix up baby spinach, goat cheese and strawberries in a medium-large salad bowl.
- Top off with cooled walnuts and serve.
- Don’t forget about your strawberry vinaigrette dressing in the fridge!
