Ughghg you know I how I feel about the crock pot. Set it and forget it – yes not the right tag line, but it works. I love being able to prepare my meals in the morning before work, throw it in the crock pot, let it slow cook all day while we’re at work, and come home and dinner is ready. We made these delicious slow cooker tacos last week and fell in love.
When Fatima’s mom stays with us, she makes a delicious peanut butter sauce. Sweet peppers, spices, and a whole lotta peanut butter over some chicken. Delicious! We modified her recipe and used turkey as our main meat. One bite of these slow cooker tacos and your heart will melt.
Slow Cooker Tacos
Ingredients
- 15 oz diced tomatoes
- 3/4 cup frozen corn
- Handful of leafy spinach
- 1 chopped green bell pepper
- 1/4 cup chopped cilantro
- 4 scallions, chopped
- 2 tablespoons peanut butter
- 1 1/2 tbsp soy sauce
- 1 tbsp chili powder
- 1/2 tsp ground cinnamon
- 2 1/2 lbs turkey breast
Instructions
Stir together crushed tomatoes, corn, spinach, green pepper, cilantro, scallions, peanut butter, soy sauce, chili powder, and cinnamon in a slow cooker.
Stir in whole turkey breast.
Cover and cook on low, 6-8 hours.
Remove the turkey to a large plate and shred.
Return to the pot and stir.
Scoop some filling into warmed tortillas, and garnish with more cilantro, scallions, and cheese!
