We made it through the heat. On Saturday, we stayed inside most of the day. By four o’clock in the afternoon, our son had cabin fever. We sat in the window for a bit, but he did not want to leave. So we decided to take a walk around the block. Oh my gosh. It was hot AF. But not just hot, the air was humid, thick, and very, very steamy. But we needed to get outside. We did a five-block radius and booked it back home. Upon returning home, I made my wife and I these skinny cucumber margaritas to cool off.

On our walk, we took it slow. Our son needed the fresh air and we needed to look at something other than the inside of our home. But I’m glad we took our time because we passed by a seafood restaurant we’ve never seen before and added it to our list of places to check out.

How can these be skinny cucumber margaritas?

Think those cucumbers on your eyes at the spa are just for show? Think again. Cucumbers have anti-inflammatory benefits and when applied directly to your skin, they have a cooling and soothing effect. The slices on your eyes are to reduce puffiness. They’re heart-healthy, too! Cucumbers are the perfect summer snack and juice to include in your cocktail.

These are skinny margaritas because we don’t add simple syrup as we’ve done in our watermelon and peach margaritas. It uses fresh lime juice and fresh strained cucumber juice, that’s it (besides the alcohol)! We wanted something that you could throw together in 5 minutes, but fancier than a regular margarita on the rocks.

You’ll want to liquefy two peeled cucumbers. Totally optional, but then strain the juice. You’ll have enough juice for about four margaritas. I went with my gut and mixed two-to-one ratio with cucumber juice and lime juice. The flavors balanced each other really well and it was so refreshing. Fatima approved. I was curious, so I added another shot of cucumber juice and it was too much. But feel free to add more lime or cucumber juice to your liking.

Ingredients

Scale
  • 2 shots tequila
  • 1 shot triple sec
  • 1 shot lime juice
  • 2 shots cucumber juice, strained (2 cucumbers blended)
  • Ice for shaking
  • Ice for serving glasses
  • Cucumber slices for garnish
  • Lime slices for garnish

Instructions

  1. Peel two cucumbers.
  2. Using a blender, liquefy cucumbers.
  3. Strain into a small bowl. You’ll want to press down on the juice in the strainer.
  4. Fill a cocktail shaker with ice.
  5. Fill a glass with ice.
  6. Add tequila, triple sec, lime juice, and 2 shots cucumber juice to the shaker.
  7. Shake until the outside of the cocktail shaker is frosted.
  8. Pour into your ice-filled glass.
  9. Garnish with cucumber and lime slices.
