Wow. This rosemary ginger margarita may be one of my favorite flavored margaritas to date. Everything is beautifully balanced. It’s aromatic, flavorful, and you still taste the tequila. You know me, if you can’t taste the tequila, send it back.

At work, we were having an appetizer and cocktails competition. Working in pairs, we had to make a delicious appetizer and pair with an equally delicious cocktail. The prizes were: Best Appetizer, Best Drink, and Best Combo. They all had to incorporate something green. I opted to use a lime slice and rosemary for my green things.

I didn’t want to be a one-show pony and make a Marquisrita. So I scoured Pinterest and found this Rosemary Ginger Margarita from Lauren at Wicked Spatula. I gave it a try over the weekend and knew it would be perfect for the competition. I initially went all in, but found that I did not like the salt on the rim. I’m not a salt person anyways, but this does not need the salt. However, do what you want! My co-worker made flank steak and chimichurri sauce on crostini; it was a perfect pairing. We won Best Drink and Best Combination!

If you can’t taste the tequila, send it back.

To be honest, I was afraid of the ginger. I didn’t know how it would taste. I am a creature of habit. Whenever I deviate from my ‘favorite’ food/drink, I often end up disappointed. But one of our favorite neighborhood restaurants, Cascabel Taqueria, has helped me discover other flavored margaritas. They have fantastic craft margaritas. You should try their spicy marg if you are in the area.

Whenever I’m making cocktails, I always measure by the shot glass. It’s the easiest thing for me and 90% of people have one somewhere in the house. So, make it your go-to measuring tool on your bar cart. This way you can forget converting ounces to tablespoons and visa-versa. Below we broke out our measurements by a shot, but for the full recipe refer to Wicked Spatula (link below).

It seems like a spring drink, but I could enjoy this all year. It’s very refreshing and worth a try!

Ingredients

Scale
  • 2 shots silver tequila (we use Espolon Blanco)
  • 2 shots lime juice
  • 1 shot rosemary ginger simple syrup (please see Wicked Spatula’s recipe)
  • Skip the salt on the rim

Instructions

Simple Syrup

  1. Follow Wicked Spatula’s recipe

Margarita

  1. Fill a shaker with ice.
  2. Add tequila, lime juice, and 1 shot of the rosemary-ginger simple syrup.
  3. Shake it up.
  4. Pour into an ice-filled glass.
  5. Garnish with a lime slice and rosemary.

Notes

Simple syrup recipe yields enough for multiple margaritas. The yield is referring to the alcohol measurements.
