Description

This roasted chicken pizza brings together rotisserie chicken, roasted tomatoes, and goat cheese for a flavorful and easy meal that feels a little fancy without the extra work.


Ingredients

  • 1 cup cherry tomatoes, roasted and diced
  • 1/4-1/2 cup soft goat cheese (not crumble)
  • 2 cups shredded mozzarella cheese
  • 1 small rotisserie chicken, shredded
  • 5 fresh basil leaves, finely chopped
  • 1/2 cup Italian-style red sauce (not pizza sauce)
  • Frozen pizza dough

Instructions

  1. Roast your tomatoes. Pretty easy: lay tomatoes on a parchment paper-lined cookie sheet. Drizzle with olive oil, thyme, and garlic. Roast in an oven at 400 degrees for about 40 minutes or until they burst and start to turn golden.
  2. Follow instructions for your frozen pizza and preheat your oven.
  3. Spread dough onto a greased cookie sheet.
  4. Add sauce to liking.
  5. Add a thin layer of shredded cheese.
  6. Then chicken, tomatoes, most of the basil.
  7. A final layer of cheese.
  8. Dollop small or medium sized scoops of goat cheese on pizza. Looking to create pockets of deliciousness.
  9. Finish with whatever basil you have left.
  10. Pop in the oven for about 10-20 minutes to melt cheese and dough turns golden (or follow instructions).
  11. Remove from oven and let sit for 5-10 minutes to set and cool.

Notes

We forgot to pickup red sauce, so we made our own. Pickup a jar of red sauce to make this process easier!
