Description
This roasted chicken pizza brings together rotisserie chicken, roasted tomatoes, and goat cheese for a flavorful and easy meal that feels a little fancy without the extra work.

- 1 cup cherry tomatoes, roasted and diced
- 1/4-1/2 cup soft goat cheese (not crumble)
- 2 cups shredded mozzarella cheese
- 1 small rotisserie chicken, shredded
- 5 fresh basil leaves, finely chopped
- 1/2 cup Italian-style red sauce (not pizza sauce)
- Frozen pizza dough
Instructions
- Roast your tomatoes. Pretty easy: lay tomatoes on a parchment paper-lined cookie sheet. Drizzle with olive oil, thyme, and garlic. Roast in an oven at 400 degrees for about 40 minutes or until they burst and start to turn golden.
- Follow instructions for your frozen pizza and preheat your oven.
- Spread dough onto a greased cookie sheet.
- Add sauce to liking.
- Add a thin layer of shredded cheese.
- Then chicken, tomatoes, most of the basil.
- A final layer of cheese.
- Dollop small or medium sized scoops of goat cheese on pizza. Looking to create pockets of deliciousness.
- Finish with whatever basil you have left.
- Pop in the oven for about 10-20 minutes to melt cheese and dough turns golden (or follow instructions).
- Remove from oven and let sit for 5-10 minutes to set and cool.

We forgot to pickup red sauce, so we made our own. Pickup a jar of red sauce to make this process easier!
