When we were in Las Vegas to see Celine Dion a few weekends ago, we had this delicious Roasted Chicken Pizza from Trevi. Maybe we were a little buzzed from their super-strong cocktails, but this pizza was delicious. So good, we needed to try to recreate it.
It was truly a weekend in Vegas, well 30-ish hours. We had been talking about going to see Celine Dion for some time. After all, Incredible is our wedding song. When I saw Celine Dion was going to end her current residency back in the fall, I bought tickets and surprised Fatima. Then January came, and I still hadn’t planned a thing. When I started to figure out everything, the parental guilt set in. We were both going to leave our (now 10-month old!) son behind for more than one night for the first time. Although he’d be in the best of care, the parental guilt started to sink in.
We wanted to get back to our LO as soon as possible. I planned for the last flight to Vegas on Friday and the first flight to New York on Sunday. It wasn’t the first time we flew somewhere for just a weekend. Our flight on Friday night was delayed two hours because of a missing co-pilot. Still don’t know what happened. So I splurged on Jet Blue’s roomier seats in a last-minute upgrade before we boarded (#noregrets). When our whirlwind of a trip was coming to an end, I upgraded to the roomier seats on the way back (#blessed).
Vegas Food
Surprisingly, we had a lot of great food on our trip. While Vegas is heavily peppered with celebrity chef restaurants, food isn’t top of mind–well, maybe drinking. Breakfast was at Pantry in the Mirage, late-lunch was at Trevi (Colosseum shops), and post-Celine drinks and appetizers were at Bobby Flay’s Mesa (around the corner from the Colosseum). Where ever we sat, the people next to us wanted to have a conversation. They always asked what we ordered and then they ordered at least one of the things we did (#trendsetters).
Pantry
Pantry was the diner-style food we needed. By the time our flight on Friday landed (now Saturday early morning) and checked into the hotel, we didn’t get to bed until 4am (but still on our East Coast time of 7am). We woke up fresh-faced and wide awake at 8:30am (!!!)–four hours of continuous sleep is all we needed, I guess haha. After giving up trying to get more sleep, we searched for a breakfast spot. We wanted to avoid a buffet. The Mirage has Pantry nestled right outside the elevators to the hotel rooms. Under the guise of a French whole-in-the-wall kitchen, Pantry is just a perfect spot to enjoy all the diner-style food you can dream of. Traveling as a pair afforded us the opportunity to sit early and sit at the counter, while larger groups had to wait for openings. The food was spectacular, the coffee is a diner’s dream. Fatima got french toast and I had fried chicken and waffles. Highly recommend.
Trevi
We weren’t sure what to think about Trevi. At 4pm, we wanted a late lunch/early dinner since we planned on dinner after Celine. At that time, they were seating for their prix-fixe dinner. We opted for bar seating and food. The crafted cocktails are strong. We were not anticipating that. So we frantically searched the menu for the most delicious thing. We landed on this roasted chicken pizza. It had goat cheese on it–Fatima is not a fan–but I got her to buy into it. She loved it.
Mesa
As fans of Beat Bobby Flay we couldn’t avoid a stop at one of his restaurants. This was close to the Colosseum, we wanted margaritas, and figured a Mexican-inspired menu would have a great appetizer menu to pick plates and share. We had fish tacos, chips, a variety of dips, and peach margaritas (which we will try to recreate this summer). It was a perfect spot to unwind post-concert.
To the Roasted Chicken Pizza
Back to the pizza. Use a rotisserie chicken. Since you’ll be roasting tomatoes you’ll want to avoid having to roast a chicken as well. But who wants to roast a whole chicken for just a pizza? Tomatoes aside, always use a rotisserie chicken! It’s a perfect blend of hearty chicken and soft goat cheese to make you want to eat more!
Roast your tomatoes. Pretty easy: lay tomatoes on a parchment paper-lined cookie sheet. Drizzle with olive oil, thyme, and garlic. Roast in an oven at 400 degrees for about 40 minutes or until they burst and start to turn golden. Follow instructions for your frozen pizza and preheat your oven. Spread dough onto a greased cookie sheet. Add sauce to liking. Add a thin layer of shredded cheese. Then chicken, tomatoes, most of the basil. A final layer of cheese. Dollop small or medium sized scoops of goat cheese on pizza. Looking to create pockets of deliciousness. Finish with whatever basil you have left. Pop in the oven for about 10-20 minutes to melt cheese and dough turns golden (or follow instructions). Remove from oven and let sit for 5-10 minutes to set and cool. We forgot to pickup red sauce, so we made our own. But pickup a jar of red sauce for own sanity!Roasted Chicken Pizza with Goat Cheese
