Description

Easter meets Autumn meets Summer. Enjoy these all year round.


Ingredients

  • 1 box lemon cake mix
  • 1 box vanilla pudding mix
  • 1 tsp fresh lemon juice
  • 4 eggs
  • 1/4 cup vegetable oil
  • 2 tbsp poppyseeds
  • 1 cup boiling water

Instructions

  1. Preheat oven to 350 degrees F.
  2. Line jumbo muffin pan with liners (or try our parchment paper hack).
  3. In a large bowl, combine all ingredients (except water). Mix until just moistened.
  4. Continue mixing, and slowly add in the boiling water.
  5. Pour batter into muffin liners, filling 3/4 of the cups.
  6. Bake for 18-20 minutes or until muffins are lightly golden brown and a toothpick comes out clean.
