Butternut Squash with Roasted Garlic and Thyme

Ingredients

Scale
  • 1 butternut squash, halved ‘like a hot dog’
  • 4 cloves, peeled (2 cloves for each halved squash pit)
  • Thyme
  • Salt
  • Pepper
  • Olive oil
  • 1 tbsp butter

Instructions

  1. Preheat the oven to 375 degrees F.
  2. Halve the butternut squash and scoop out the pit (guts and seeds).
  3. Place skin side down in a baking dish and drizzle with olive oil. Brush the oil all over the flesh.
  4. Generously season with salt and pepper.
  5. Place two garlic cloves in each pit.
  6. Place in the oven for about 45 minutes.
  7. Once you can pierce the squash all the way through, remove from the oven and let cool.
  8. Scoop out the flesh, including the garlic and mash.
  9. Add butter and thyme and continue to mash.
  10. Add more salt and pepper as needed.
  11. Serve warm.
