- 1 butternut squash, halved ‘like a hot dog’
- 4 cloves, peeled (2 cloves for each halved squash pit)
- Thyme
- Salt
- Pepper
- Olive oil
- 1 tbsp butter
Instructions
- Preheat the oven to 375 degrees F.
- Halve the butternut squash and scoop out the pit (guts and seeds).
- Place skin side down in a baking dish and drizzle with olive oil. Brush the oil all over the flesh.
- Generously season with salt and pepper.
- Place two garlic cloves in each pit.
- Place in the oven for about 45 minutes.
- Once you can pierce the squash all the way through, remove from the oven and let cool.
- Scoop out the flesh, including the garlic and mash.
- Add butter and thyme and continue to mash.
- Add more salt and pepper as needed.
- Serve warm.
