Fatima Turns 30: Barbie Cake with Gold Buttercream

A while ago, Fatima and I were watching something (I can’t remember if it was a movie or TV show) and a little girl got a Barbie cake. Fatima’s eyes lit up and said, “Oh I’ve always wanted a Barbie cake. One of my sisters got one when we were growing up and I was so jealous.” So when thinking about what kind of cake I should make her for her 30th birthday, I knew I had to make a Barbie cake!

That’s right, Fatima and I share a birthday week. Yes, we’re that annoying couple that does everything together, haha. Truthfully, it makes the week more fun to celebrate. Two dinners, two cakes, all the celebrations.

A Barbie Cake for a

Over the last month, I’ve not only been trying to figure out my own cake but also researching how to construct a cookie cake. Putting together the Barbie cake was so much harder than I thought it would be. There are so many creative ways to do this.

I’ve made a pregnancy cake before and we already had a hemisphere pan. Luckily it’s a 9-inch pan and fit perfectly with my 9-inch regular cake pan. Some people use many layers of cake and carve the dress, but I decided to use just one layer of cake for the base and the hemisphere cake for the dress.

I cut a hole in the center of the cake and placed the naked Barbie inside. If you can find a Barbie with a great top, then go for that, I had issues trying to frost her top. I ended up with this spiky design, that actually looks kind of cool; adds so much texture.

For her ‘dress’, I attempted to try an ombre frosting design using a golden-yellow Wilton gel. It didn’t quite work out, however, I love the look of it. After the crumb coat, I layered the buttercream roses from the bottom up. The Barbie was just a little too tall for the cake, so I stacked some frosting around her waist to make up for the height difference.

Can you believe I used four cans of store-bought frosting?! I think making frosting from scratch may have been easier because once I got through the three I bought, I had to run out again for the fourth can! I think I did a good job for my first Barbie cake. It wasn’t exactly the finished product I wanted, but Fatima loved it and that’s all that matters.
