Description

Make these delicious pancakes with bananas, oatmeal, and chocolate chips. Completely optional: flaxseed.


Ingredients

Units Scale
  • Box of Complete Mix (see instructions for how much mix) – we use Krusteaz
  • Water (see boxed pancake mix for how much water)
  • 1 banana, mashed, for every batch of mix
  • 1/2 to 1 cup of oatmeal
  • 1/2 cup or less of dark chocolate (or semi-sweet) chips
  • Optional: 1 tablespoon of flaxseed

Instructions

  1. Make the complete mix according to the box directions.
  2. Preheat griddle or skillet according to the directions.
  3. Take note of the consistency.
  4. Mix in the mashed banana.
  5. Add in 1/2 cup of oatmeal and stir. Note the consistency and add more water if necessary (moreso if you’re adding upwards of a full cup).
  6. Optional: add in the flaxseed.
  7. Let the mix sit for about 15 minutes to let the oatmeal soften.
  8. Take note of the mix’s consistency and add a little more water as needed. In total I may have added about 1/4 cup extra water when I added in a full cup of oatmeal.
  9. Pour 2/3 cup batter on the griddle/skillet.
  10. Drop some chocolate chips in the pancake batter on the griddle/skillet and push them into the batter.
  11. Flip when bottoms are golden brown (usually when the bubbles and holes are done).
  12. Remove from the griddle after a few minutes or until the bottom
