Since we made these hot honey fried chicken sandwiches back in April, we’ve made them once a month. Is it the hot honey glaze, the mayo, the pickles, or the fried chicken that makes this so good? Yes.
There’s a restaurant we love called The Shady Lady. They have one of the best chicken sandwiches in Queens. The bread is perfect, the chicken is fried to perfection, and the sriracha honey mustard is exceptional. However, I think what makes their chicken standout, is the breading. They also have a fried chicken and waffles, and those, too, are amazing. We’ve tried to remake this sandwich on our own. We’re close, but not close enough. This sandwich from The Full Plate reminds me of Shady Lady’s.

When it comes to fried chicken, it’s all in the preparation, the breading, and the frying. Fatima is the only person allowed to fry chicken. I’ve had my share of frying accidents, and I just don’t get it like Fat gets it. She handles the frying and I handle all the baking. We know what lanes to stay in :).
When you fry something, the oil needs to be the perfect temperature. Too hot and the outside gets burnt. Not hot enough and the fried chicken just soaks up the oil. The perfect temperature will cook the chicken and the breading appropriately to give you a savory crunch and a cooked, juicy piece of chicken. Had we not just made these a few weeks ago, I would have made this my Father’s Day meal. But I went for black bean burgers instead.
